I just read the article with directions on how to roast oysters Lowcountry style. It sounds easy enought but it doesn't tell you how long to roast the oysters. Is this 1 minute-5 minutes? Seeing as they are covered with wet burlap how will I know when they are done? Help

Just peek at them on occasion. When they open up they are ready. I prefer to pull them off just BEFORE they open.(that is a trick) I do a oyseter roast every year BY MYSELF for 150 people. It is best to to have two or three batches going so there is no waiting. I am in Greenville SC (upstate) a 40lbs box feeds 10 people up here. In the Lowcountry a 40lbs box feeds 2-3people. Get the oyster knifes that have the blue handle they keep people from getting hurt. Shop for them 6 bucks a knife should cover you.

An oyster roast is a social event. Relax and have fun. Also make you own cocktail sauce with chile sauce, worchester, texas pete and horseradish.

Thanks for the info Jeff. We're new to North Carolina and have attended one oyster roast since we've been here. (Wilmington) It was a great time; not to mention how yummy the oysters were. Plan to have a roast for New Years Eve.

Aloha,

We have oysters here in Puget Sound that me and my family love to eat on the half shell and also roasted or grilled. We place them on the grill, cup side down and as soon as they sizzle and/or spit out some liquid, it is time to remove from the heat. This requires constantly watching the oysters cause if you miss they will end up overcooked...
