I've been interested in learning to cook game, such as elk, venison, quail, caribou, etc. What are everyone's favorite recipes?

I don't really care for game that much.....it's usually too, well, GAMEY:eek: I worked one fall/winter in Jackson Hole, WY and had a lot of chances to cook and eat game. I knew before I got there that elk is okay if it's done right...but I thought everything else pretty much sucked (antelope, deer, wild turkey, etc..) UNTIL I cooked and ate MOOSE! I am now a bonafide MOOSE LOVER! I was told their lack of gaminess or tough/stringiness has to do with their diet of wetland type vegetation. No dry bark/grass/weeds or other crud for these guys! Depending on the cut of moose, you can pretty much treat them like lean beef. Very tasty. The only gaminess is a slight odor when you first start to brown it. I guess my favorite would be a bourguignon type of deal...very simple. It's great in any type of braise, but I also I did brochettes, chicken-fried steak, chili (of course), pot roast. One of the guys said moose snout is to die for....I'll take his word for it. P.S. I don't consider buffalo as game at this time, or it would be my fave :D

Wow, you've got me sold on the moose! I'm certain I won't be able to find a local source for that in Illinois-- do you know of a good mail order or online purveyor?

Well, you can buy caribou, whale, seal, armadillo, elk, yak, snake, llama, ostrich, frog, gator/croc, kangaroo etc... at www.exoticmeats.com , but moose? NO!! Go figger. It is basically illegal to sell moose meat unless you belong to certain Canadian tribes (MicMac) sp? and THEN it is illegal to buy it unless you have a license to buy :rolleyes: I guess you need to know a U.S. hunter willing to ;)"give";) you some, or you need to GET YOURSELF A MOOSE:D Reminds me of a Mason Williams song....
